Most of us southrons will celebrate with blackeye peas and hog jowl in honor to our forefathers. When the yanks came thru and burned or destroyed everything, they left the cowpeas thinking they wernt fit for humans. When they raided the smoke house they left the head and feet. That's how we survived. Now were eating high off the hog. :D

Hog jowls....my Dad used to love pickled pigs feet! He grew up in a cabin in northern Minnesota and considered them a delicacy. :eek:

Pickled herring and potato lefse for me, a nod to my Norse heritage. My late wife was Swedish and made the best Swedish meat balls...they are always on our feasting list for the holidays. Our youngest daughter has taken over being the keeper of the meatballs recipe, including the old electric fry pan they were made in for decades.

I Et mine for dinner

(lunch to my northern friends) blackeye peas with the jowls cooked in and a little hog lard for seasoning, along with a mess of fresh turnip greens picked out of our garden, a big ol skillet of fried okra, and a pone of cracklin bread. Shore nuff fitin' Oh yeah, a slice of buttermilk pie and a baked sweet tater:)

We used to butcher about 4or 5 hogs a year when I was a kid. I don't know what Grandpa did with the jowls , threw em in the sausage I guess. I tried em one time and they tasted like fat bacon to me and my fore fathers came from Tennessee. We know how to fix ham and tenderloin though. Doug
