I'm looking for a set of scope rings for a 27 mm tube. Redfield/Leupold bayonet type or Weaver type, medium height should work. Thanks.

Had a similar question from a customer with a very nice German scope with 26mm tube, 30mm rings and a pair of delrin bushes turned to fit, full choice of rings and a happy customer!

Dont think I've ever seen 27mm before, but:
I've opened a couple of 1" sets to 26mm without issue, maybe you could do the same for 27mm.
I put .015 shim stock between the ring halves and clamp them good, then setup in the mill and helical them out.
I would imagin you could also do it with an adjustable reamer and a simple jig to keep the reamer strait.

30 mm rings with brass spacers....or bore a set of 1" spacers out to 27....
